One of Mr. Robuchon’s signature creations, a soft-boiled egg, crispy on the outside contrasting with the soft and rich texture of the runny yolk, a quenelle of Imperial caviar. All around, dices of smoked salmon on a bed of peppered cream.
Caviar with crustacean jelly and cauliflower cream
The iconic dish of Mr. Robuchon, based around the idea of the combination of delicate textures. From the bottom to the top, a subtle lobster jelly topped with Imperial caviar covered with a light cauliflower cream. To enjoy the full complexity and fineness of this dish, going all the way down to the bottom would be highly recommended, in order to catch the different layers of flavors and textures.

Mini beef burger with pan-seared foie gras, French fries and homemade burger sauce
A ‘haute cuisine’ interpretation of a classic beef burger using the finest ingredients. Prepared with Wagyu beef topped with a slice of pan-seared foie gras, caramelized bell pepper, crispy pearl onion ring and arugula leaves. On the side, some homemade French fries complemented with own burger sauce.
